My hunt for the perfect blueberry muffin recipe has ended...



1 1/2 cups of flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp salt

combine liquids in measuring cup:
1/3 cup oil
1 egg
fill to 1 cup of milk

cinnamon
pinch of nutmeg
1 cup blueberries (or cranberries in the Fall)
1/2 cup of shredded zucchini

bake at 425 for 20-25 minutes
